Shrimp + Asparagus Pesto Pata
A quick, simple, healthy and delicious recipe for the spring and summer.
1 Measuring Cup
1 Baking Sheet
Crushed Red Pepper Flakes
Frozen or Fresh
Bring pasta water to a boil and preheat oven to 400 degrees
Chop asparagus and season with olive oil, crushed red pepper, onion powder, minced garlic, salt, and black pepper and place in the oven for 20 minutes
Drain pasta, saving a cup of pasta water
Add frozen shrimp to now-empty pot and saute with butter, onion powder, garlic powder, crushed red pepper, creole seasoning, salt, and black pepper
Combine pesto, shrimp, roasted asparagus, rotini, and pasta water in the pot
Add to bowl and serve
I use frozen ingredients to make things quicker and simpler. You can also add a little parmesan to the top if needed.
