How has your diet been during the pandemic? Mine had quite literally been all over the place. I have lost weight gained it back and am not losing it again. I think my diet has been the same rollercoaster as 2020. I’ve been occasionally tracking my diet mostly to make sure I’m not consistently over or under eating so I decided to share what I eat in a day. This is no way me saying this is a perfect diet. Breakfast

This meal is largely dependent on when I wake up in the morning. If i leave enough time I love to make a smoothie. I typically keep various frozen fruits in my freezer but this day I used strawberries, pineapple, and bananas. I make my smoothie with oat milk, Greek yogurt, honey, and spinach (for additional nutrients). With this I had 2 boiled eggs seasoned with black pepper and everything but the bagel seasoning from Trader Joe’s
Snack
I have been OBSESSED with trail mix lately. I usually stick to the Happy Trekking and Trails End mixes from Trader Joe’s.

Lunch

So if I actually get eat lunch it’s usually a grain bowl or a sandwich. The day I tracked I made a turkey sandwich with swish cheese, spinach, tomato, red onion, avocado, and mustard on toasted bread with a side of baby carrots and ranch.
Dinner

This night I had leftovers from the day before. I air fried chicken thighs which was a 10/10 and I would recommend getting an air fryer (check out this one). I also ate cabbage for the first time since childhood and it was super delicious. I followed this recipe.
Snack

Before bedtime I decided to chow down on a few green grapes. I have been obsessed with them lately!
